Kind and Yum started in a rented commissary kitchen at 4am, testing aquafaba meringues until the fridge ran empty. We weren't trying to make "vegan versions" of things — we were trying to make the thing, full stop, minus the animal.
Every recipe gets rebuilt from the crumb up, not swapped ingredient-for-ingredient. That's the only rule that hasn't changed since the first tray came out of the oven.
